Ingredients

  • 1 pound elbow macaroni
  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup gruyere cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons breadcrumbs

Directions

  1. 1Cook macaroni in salted boiling water until al dente, about 8 minutes; drain and set aside.
  2. 2Melt butter in a large saucepan over medium heat, then whisk in flour to create a roux; cook for 1-2 minutes.
  3. 3Gradually pour in milk while whisking constantly to avoid lumps, then simmer for 3-4 minutes until slightly thickened.
  4. 4Remove from heat and stir in cheddar and gruyere cheese until completely melted and smooth.
  5. 5Season with salt, black pepper, and cayenne pepper to taste.
  6. 6Fold in the cooked macaroni until fully coated with sauce.
  7. 7Transfer to a serving dish, top with breadcrumbs, and serve immediately.
