Strawberry Cheesecake

Ingredients
- •2 cups graham cracker crumbs
- •6 tablespoons melted butter
- •32 oz cream cheese, softened
- •1 cup granulated sugar
- •1 cup sour cream
- •2 teaspoons vanilla extract
- •4 large eggs
- •2 pounds fresh strawberries, sliced
- •1/3 cup strawberry jam
Directions
- 1Mix graham cracker crumbs with melted butter and press into the bottom of a 9-inch springform pan. Bake at 325°F for 8 minutes, then cool.
- 2Beat softened cream cheese and sugar together until smooth, then mix in sour cream and vanilla extract.
- 3Add eggs one at a time, beating on low speed after each addition until just combined.
- 4Pour filling over crust and bake at 325°F for 50-60 minutes until the center is almost set but slightly jiggly.
- 5Cool cheesecake in the oven with the door cracked open for 1 hour, then refrigerate for at least 4 hours or overnight.
- 6Heat strawberry jam with 1 tablespoon water and brush over the top of the cheesecake.
- 7Arrange fresh sliced strawberries on top and serve chilled.
