Strawberry Cheesecake

Ingredients

  • 2 cups graham cracker crumbs
  • 6 tablespoons melted butter
  • 32 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 2 pounds fresh strawberries, sliced
  • 1/3 cup strawberry jam

Directions

  1. 1Mix graham cracker crumbs with melted butter and press into the bottom of a 9-inch springform pan. Bake at 325°F for 8 minutes, then cool.
  2. 2Beat softened cream cheese and sugar together until smooth, then mix in sour cream and vanilla extract.
  3. 3Add eggs one at a time, beating on low speed after each addition until just combined.
  4. 4Pour filling over crust and bake at 325°F for 50-60 minutes until the center is almost set but slightly jiggly.
  5. 5Cool cheesecake in the oven with the door cracked open for 1 hour, then refrigerate for at least 4 hours or overnight.
  6. 6Heat strawberry jam with 1 tablespoon water and brush over the top of the cheesecake.
  7. 7Arrange fresh sliced strawberries on top and serve chilled.
