Strawberry Mousse

Ingredients

  • 1 pound fresh strawberries, hulled
  • 3 tablespoons sugar
  • 1 tablespoon fresh lemon juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 egg whites, room temperature
  • 1/4 teaspoon salt

Directions

  1. 1Blend strawberries with sugar and lemon juice until smooth, then strain through a fine sieve to remove seeds.
  2. 2In a separate bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  3. 3In another bowl, beat egg whites with salt until stiff peaks form.
  4. 4Gently fold the strawberry puree into the whipped cream until combined.
  5. 5Carefully fold the beaten egg whites into the strawberry mixture in two additions.
  6. 6Divide mousse among serving glasses or bowls and refrigerate for at least 15 minutes before serving.
