Strawberry Mousse

Ingredients
- •1 pound fresh strawberries, hulled
- •3 tablespoons sugar
- •1 tablespoon fresh lemon juice
- •1 cup heavy whipping cream
- •2 tablespoons powdered sugar

- •2 egg whites, room temperature
- •1/4 teaspoon salt
Directions
- 1Blend strawberries with sugar and lemon juice until smooth, then strain through a fine sieve to remove seeds.
- 2In a separate bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- 3In another bowl, beat egg whites with salt until stiff peaks form.
- 4Gently fold the strawberry puree into the whipped cream until combined.
- 5Carefully fold the beaten egg whites into the strawberry mixture in two additions.
- 6Divide mousse among serving glasses or bowls and refrigerate for at least 15 minutes before serving.
