String Hoppers with Pol Sambol (Sri Lankan Breakfast)
Sri Lankan steamed rice-noodle nests served with a fresh coconut sambol of chile, lime, and onion.

Ingredients
- •2 cups rice flour
- •1 1/2 cups hot water
- •1 tsp salt
- •2 cups unsweetened shredded coconut
- •1/2 medium red onion, finely diced
- •1 red chili, finely minced
- •3 tbsp fresh lime juice
Directions
- 1Mix rice flour, half the salt, and hot water into a soft dough.
- 2Press the dough through a string-hopper press onto lightly oiled steaming trays.
- 3Steam the noodle nests for 5–7 minutes until set.
- 4Mix coconut, red onion, chili, lime juice, and remaining salt.
- 5Let the pol sambol stand for 5 minutes so the coconut absorbs the lime.
- 6Serve the warm string hoppers with pol sambol alongside.
💡 Use hot water and work while the dough is warm; cool rice-flour dough is much harder to press.
