String Hoppers with Pol Sambol (Sri Lankan Breakfast)

Sri Lankan steamed rice-noodle nests served with a fresh coconut sambol of chile, lime, and onion.

Ingredients

  • 2 cups rice flour
  • 1 1/2 cups hot water
  • 1 tsp salt
  • 2 cups unsweetened shredded coconut
  • 1/2 medium red onion, finely diced
  • 1 red chili, finely minced
  • 3 tbsp fresh lime juice

Directions

  1. 1Mix rice flour, half the salt, and hot water into a soft dough.
  2. 2Press the dough through a string-hopper press onto lightly oiled steaming trays.
  3. 3Steam the noodle nests for 5–7 minutes until set.
  4. 4Mix coconut, red onion, chili, lime juice, and remaining salt.
  5. 5Let the pol sambol stand for 5 minutes so the coconut absorbs the lime.
  6. 6Serve the warm string hoppers with pol sambol alongside.

💡 Use hot water and work while the dough is warm; cool rice-flour dough is much harder to press.
