Sucuk and Eggs

Ingredients
- •200g sucuk (Turkish spiced sausage)
- •4 eggs
- •1 tablespoon butter
- •1/2 onion, thinly sliced
- •1 teaspoon paprika
- •1/2 teaspoon black pepper
- •1/4 teaspoon salt
- •2 tablespoons fresh parsley, chopped
Directions
- 1Slice the sucuk into rounds about 1/4 inch thick.
- 2Heat butter in a large skillet over medium heat and add the sliced onion, sautéing until softened, about 3 minutes.
- 3Add the sucuk slices to the skillet and cook for 3-4 minutes until the edges are slightly crispy and the fat renders.
- 4Crack the eggs directly into the skillet over the sucuk and onions.
- 5Sprinkle with paprika, salt, and black pepper, then cover the skillet and cook for 4-5 minutes until eggs reach desired doneness.
- 6Garnish with fresh parsley and serve hot with bread.
