Ingredients

- •3 tbsp rice vinegar

Directions
- 1Toss cucumber slices with salt in a bowl and let stand 10 minutes to draw out excess water.
- 2Whisk rice vinegar, sugar, and soy sauce in a separate bowl until the sugar dissolves.
- 3Squeeze the cucumber gently by handfuls and discard the released liquid.
- 4Toss cucumber with the vinegar dressing and sesame seeds, then serve chilled.
