Ingredients

  • 2 medium cucumber, very thinly sliced
  • 1/2 tsp salt
  • 3 tbsp rice vinegar
  • 1 tbsp granulated sugar
  • 1 tsp soy sauce
  • 2 tsp sesame seeds, toasted

Directions

  1. 1Toss cucumber slices with salt in a bowl and let stand 10 minutes to draw out excess water.
  2. 2Whisk rice vinegar, sugar, and soy sauce in a separate bowl until the sugar dissolves.
  3. 3Squeeze the cucumber gently by handfuls and discard the released liquid.
  4. 4Toss cucumber with the vinegar dressing and sesame seeds, then serve chilled.
