Sushi Rice
Vinegar-seasoned short-grain Japanese rice cooked and cooled to body temperature, the essential base for nigiri, maki, temaki, and all other sushi preparations.

Ingredients
- •2 cups (400 g) Japanese short-grain white rice (such as Koshihikari)
- •2 cups (480 ml) cold water
- •4 tablespoons (60 ml) unseasoned rice vinegar
- •2 tablespoons (25 g) white caster sugar
- •1 teaspoon (6 g) fine sea salt
Directions
- 1Rinse the rice: place it in a large bowl, cover with cold water, swirl, and drain. Repeat 4–5 times until the water runs nearly clear, then drain through a fine-mesh sieve and let it rest in the sieve for 10 minutes.
- 2Combine the drained rice and 2 cups cold water in a heavy-bottomed saucepan with a tight-fitting lid. Bring to a full boil over medium-high heat, then immediately reduce to the lowest possible heat, cover, and cook for 13–14 minutes until all the water is absorbed and the surface of the rice shows small steam holes.
- 3Remove the pan from the heat and leave it covered and undisturbed for 10 minutes; do not lift the lid. This steaming phase finishes the cook without drying the grains.
- 4While the rice steams, combine the rice vinegar, sugar, and salt in a small saucepan or microwave-safe bowl. Heat gently and stir just until the sugar and salt dissolve completely; do not boil. Set aside to cool slightly.
- 5Turn the hot rice out into a wide, shallow non-metallic bowl (a wooden sushi tub or a large salad bowl works well). Pour the vinegar mixture evenly over the rice. Using a rice paddle or flat spatula, fold and cut the seasoning through the rice with horizontal slicing strokes — do not stir or mash. At the same time, fan the rice vigorously (or use a small electric fan) to cool it rapidly; this gives the grains their characteristic glossy sheen.
- 6The rice is correctly seasoned when every grain is lightly coated, it tastes pleasantly tangy-sweet with a clean salt finish, and no puddle of liquid remains in the bowl. It is correctly cooled when it feels body-warm to the touch — roughly 35–37 °C (95–99 °F) — not hot, not cold. This takes about 15–20 minutes of fanning.
- 7HOLDING RULE — mandatory: use the seasoned rice within two hours of seasoning, kept at cool room temperature loosely covered with a clean damp cloth. Never hold it warm — not on a rice-cooker keep-warm setting, not in a switched-off oven, not beside the hob. Cooked rice harbours Bacillus cereus spores whose toxins are not destroyed by reheating, and a warm hold is exactly the condition that allows toxin to build. If you cannot use the rice within two hours, transfer it to a sealed container and refrigerate it immediately; the grains will firm up, but firm rice is a far smaller loss than food poisoning. Do not then leave the refrigerated rice out on the counter to come back to room temperature — that is precisely the scenario that must be avoided.
