Grilled marinated meat skewers coated in a spiced peanut crust, a beloved West African street food.

Ingredients

  • 2 lbs beef or lamb, cut into 1-inch cubes
  • 1/2 cup smooth peanut butter
  • 3 tbsp paprika
  • 2 tbsp cayenne pepper
  • 1 tbsp garlic powder
  • 1 tbsp ground ginger
  • 2 tbsp vegetable oil
  • 2 tbsp lime juice
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions

  1. 1Mix peanut butter, paprika, cayenne, garlic powder, ginger, oil, lime juice, salt, and pepper in a bowl to create the marinade.
  2. 2Coat beef cubes thoroughly with the marinade and let sit for 20 minutes.
  3. 3Thread marinated meat onto metal or wooden skewers (pre-soak wood skewers for 30 minutes).
  4. 4Heat a grill or grill pan to medium-high heat and lightly oil the surface.
  5. 5Grill skewers for 8-10 minutes, turning every 2-3 minutes, until meat is cooked through and charred.
  6. 6Serve hot with sliced onions, tomatoes, and lime wedges on the side.
