Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/4 cups whole milk
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons butter for cooking
  • 1/2 cup jam or berry compote
  • 1/2 cup whipped cream

Directions

  1. 1Mix flour, sugar, and salt in a large bowl.
  2. 2Whisk eggs and milk together, then add to flour mixture with melted butter and vanilla.
  3. 3Stir until smooth, letting batter rest for 5 minutes.
  4. 4Heat butter in a non-stick skillet or plättar pan over medium-high heat.
  5. 5Pour small amounts of batter to make thin pancakes, cooking about 1-2 minutes per side until golden.
  6. 6Stack pancakes on a plate as they cook.
