Sweet Potato Hash

A crispy, golden breakfast hash loaded with roasted sweet potatoes, peppers, and onions, perfectly seasoned and topped with a fried egg.

Ingredients

  • 2 tablespoons olive oil
  • 1 large sweet potato, peeled and diced
  • 1 medium red bell pepper, diced
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • to taste salt and pepper
  • 4 eggs
  • 2 tablespoons butter
  • 2 tablespoons fresh cilantro, chopped

Directions

  1. 1Heat olive oil in a large skillet over medium-high heat and add diced sweet potato. Cook for 8-10 minutes, stirring occasionally, until golden and tender.
  2. 2Add red bell pepper and red onion to the skillet and cook for 4-5 minutes until softened.
  3. 3Stir in minced garlic, smoked paprika, cumin, salt, and pepper. Cook for 1 minute until fragrant.
  4. 4Push the hash to the sides of the skillet and add butter to the center. Crack eggs into the skillet and cook to your desired doneness, 3-4 minutes for sunny-side up.
  5. 5Divide the hash among plates and top each serving with a fried egg. Garnish with fresh cilantro and serve immediately.
