Sweet Potato Hash
A crispy, golden breakfast hash loaded with roasted sweet potatoes, peppers, and onions, perfectly seasoned and topped with a fried egg.

Ingredients
- •2 tablespoons olive oil
- •1 large sweet potato, peeled and diced
- •1 medium red bell pepper, diced
- •1 small red onion, diced
- •2 cloves garlic, minced
- •1 teaspoon smoked paprika
- •½ teaspoon cumin
- •to taste salt and pepper
- •4 eggs
- •2 tablespoons butter
- •2 tablespoons fresh cilantro, chopped
Directions
- 1Heat olive oil in a large skillet over medium-high heat and add diced sweet potato. Cook for 8-10 minutes, stirring occasionally, until golden and tender.
- 2Add red bell pepper and red onion to the skillet and cook for 4-5 minutes until softened.
- 3Stir in minced garlic, smoked paprika, cumin, salt, and pepper. Cook for 1 minute until fragrant.
- 4Push the hash to the sides of the skillet and add butter to the center. Crack eggs into the skillet and cook to your desired doneness, 3-4 minutes for sunny-side up.
- 5Divide the hash among plates and top each serving with a fried egg. Garnish with fresh cilantro and serve immediately.
