Ingredients

  • 1 9-inch unbaked pie crust
  • 2 pounds sweet potatoes
  • 4 tablespoons butter
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 large eggs
  • 1/4 teaspoon salt

Directions

  1. 1Preheat oven to 350°F. Bake sweet potatoes for 45 minutes until tender, then cool and peel.
  2. 2Mash the cooked sweet potatoes with butter until smooth, then mix in milk and cream.
  3. 3Stir in sugar, vanilla, cinnamon, nutmeg, ginger, and salt until well combined.
  4. 4Beat eggs and fold into the sweet potato mixture until fully incorporated.
  5. 5Pour filling into the pie crust and bake for 50-60 minutes until a knife inserted near the center comes out clean.
