Tabbouleh
A vibrant Middle Eastern salad bursting with fresh parsley, tangy lemon, and fluffy bulgur wheat.

Ingredients
- •1 cup bulgur wheat
- •1.5 cups boiling water
- •2 cups fresh parsley, finely chopped
- •0.5 cup fresh mint, finely chopped
- •2 medium tomatoes, diced
- •1 medium cucumber, diced
- •0.5 cup green onions, chopped
- •0.5 cup extra virgin olive oil
- •0.5 cup fresh lemon juice
- •1 teaspoon salt
- •0.5 teaspoon black pepper
Directions
- 1Pour boiling water over bulgur wheat in a bowl, cover with plastic wrap, and let sit for 15 minutes until tender and water is absorbed.
- 2Fluff the bulgur with a fork and transfer to a large mixing bowl.
- 3Add parsley, mint, tomatoes, cucumber, and green onions to the bulgur.
- 4In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- 5Pour dressing over the salad and toss gently until well combined.
- 6Let the tabbouleh rest for 10 minutes to allow flavors to meld, then serve chilled or at room temperature.
