Ingredients

  • 1 cup bulgur wheat
  • 1.5 cups boiling water
  • 2 cups fresh parsley, finely chopped
  • 0.5 cup fresh mint, finely chopped
  • 2 medium tomatoes, diced
  • 1 medium cucumber, diced
  • 0.5 cup green onions, chopped
  • 0.5 cup extra virgin olive oil
  • 0.5 cup fresh lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

  1. 1Pour boiling water over bulgur wheat in a bowl, cover with plastic wrap, and let sit for 15 minutes until tender and water is absorbed.
  2. 2Fluff the bulgur with a fork and transfer to a large mixing bowl.
  3. 3Add parsley, mint, tomatoes, cucumber, and green onions to the bulgur.
  4. 4In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. 5Pour dressing over the salad and toss gently until well combined.
  6. 6Let the tabbouleh rest for 10 minutes to allow flavors to meld, then serve chilled or at room temperature.
