Tacos de Papa (Mexican Potato Tacos)

Corn tortillas folded around seasoned mashed potato and shallow-fried until blistered, topped cold and crunchy.

Ingredients

  • 700 g potatoes
  • 12 corn tortillas
  • 120 g queso fresco, crumbled
  • 150 g lettuce, shredded
  • 120 ml salsa roja
  • 250 ml neutral oil, for shallow-frying

Directions

  1. 1Boil the potatoes until tender, drain well, and mash with plenty of salt.
  2. 2Warm the tortillas until pliable so they fold without cracking.
  3. 3Spoon potato onto one half of each tortilla and fold it over, pressing the edge.
  4. 4Heat a centimetre of oil and fry the tacos two minutes a side until blistered and crisp.
  5. 5Drain on paper and open each one slightly.
  6. 6Fill with shredded lettuce, crumbled queso fresco and a spoon of salsa roja.

💡 Warm the tortillas properly before folding. A cold tortilla splits along the fold and the filling escapes into the oil.
