Tacos de Papa (Mexican Potato Tacos)
Corn tortillas folded around seasoned mashed potato and shallow-fried until blistered, topped cold and crunchy.

Ingredients
- •700 g potatoes
- •12 corn tortillas
- •120 g queso fresco, crumbled
- •150 g lettuce, shredded
- •120 ml salsa roja
- •250 ml neutral oil, for shallow-frying
Directions
- 1Boil the potatoes until tender, drain well, and mash with plenty of salt.
- 2Warm the tortillas until pliable so they fold without cracking.
- 3Spoon potato onto one half of each tortilla and fold it over, pressing the edge.
- 4Heat a centimetre of oil and fry the tacos two minutes a side until blistered and crisp.
- 5Drain on paper and open each one slightly.
- 6Fill with shredded lettuce, crumbled queso fresco and a spoon of salsa roja.
💡 Warm the tortillas properly before folding. A cold tortilla splits along the fold and the filling escapes into the oil.
