Taiwanese Gua Bao (Braised Pork Buns)

Ingredients
- •2 lb pork belly, cut into thick slices
- •1/3 cup soy sauce
- •1/3 cup rice wine
- •2 tbsp brown sugar
- •1 tbsp fresh ginger, sliced
- •4 cloves garlic, smashed
- •3 cups water
- •3 cups all-purpose flour
- •2 tsp instant yeast
- •2 tbsp granulated sugar
- •1 cup warm water for dough
- •1 cup pickled mustard greens, chopped
- •1/2 cup roasted peanuts, crushed
- •1 cup fresh cilantro
Directions
- 1Simmer pork belly with soy sauce, rice wine, brown sugar, ginger, garlic, and water for 90 minutes.
- 2Mix flour, yeast, sugar, and warm water into a soft dough and rise for 60 minutes.
- 3Divide and roll the dough into ovals, brush lightly with oil, and fold in half.
- 4Steam the folded buns for 10 minutes until puffed.
- 5Drain the tender pork belly and reduce a little braising liquid until glossy.
- 6Fill each bun with pork, pickled mustard greens, peanuts, and cilantro.
