Takoyaki
Golden, crispy octopus balls with a creamy center, topped with takoyaki sauce, mayo, bonito flakes, and aonori.

Ingredients
- •1 cup all-purpose flour
- •1 cup dashi or chicken broth
- •1 egg
- •8 oz octopus, diced into small pieces
- •2 tbsp takoyaki sauce
- •2 tbsp Japanese mayo
- •1/4 cup green onions, chopped
- •2 tbsp pickled ginger, chopped
- •1 tsp aonori (seaweed powder)
- •1 tbsp bonito flakes
- •vegetable oil for cooking
- •to taste salt and pepper
Directions
- 1Mix flour, dashi, and egg in a bowl to create a smooth batter; season with salt and pepper.
- 2Heat takoyaki pan with oil in each mold until very hot.
- 3Pour batter into each mold until halfway full, add a piece of octopus and some green onion and pickled ginger to each.
- 4Fill molds completely with batter and cook for 2-3 minutes until the bottom is set.
- 5Using takoyaki picks or skewers, turn each ball and cook for another 2-3 minutes until golden brown.
- 6Transfer cooked takoyaki to a serving plate and drizzle with takoyaki sauce and mayo.
- 7Sprinkle with aonori powder and top with bonito flakes; serve immediately while hot.
