Ingredients
- •400 g hot cooked white rice
- •2 pasteurized eggs
- •2 tbsp soy sauce
- •2 green onions, thinly sliced
Directions
- 1Use pasteurized eggs. The egg is not cooked through, so this is the one ingredient that is not negotiable.
- 2Have the rice properly hot and steaming; it is the only heat the egg will get.
- 3Beat the eggs in a bowl until the white is completely broken up and no clear streaks remain.
- 4Make a well in the hot rice, pour in the egg, and add the soy sauce.
- 5Stir hard and fast for about twenty seconds until the egg turns glossy and coats every grain.
- 6Scatter the green onion over and eat at once.
💡 Beat the white until it disappears. Any unbroken white sets into a slippery thread instead of a creamy coating.
