Ingredients

  • 400 g hot cooked white rice
  • 2 pasteurized eggs
  • 2 tbsp soy sauce
  • 2 green onions, thinly sliced

Directions

  1. 1Use pasteurized eggs. The egg is not cooked through, so this is the one ingredient that is not negotiable.
  2. 2Have the rice properly hot and steaming; it is the only heat the egg will get.
  3. 3Beat the eggs in a bowl until the white is completely broken up and no clear streaks remain.
  4. 4Make a well in the hot rice, pour in the egg, and add the soy sauce.
  5. 5Stir hard and fast for about twenty seconds until the egg turns glossy and coats every grain.
  6. 6Scatter the green onion over and eat at once.

💡 Beat the white until it disappears. Any unbroken white sets into a slippery thread instead of a creamy coating.
