Salvadoran sweet corn tamales made from fresh corn, milk, butter, and a little sugar, steamed in corn husks.

Ingredients

  • 6 cups fresh corn kernels
  • 1 cup whole milk
  • 4 tbsp unsalted butter, melted
  • 3 tbsp granulated sugar
  • 1 tsp salt
  • 12 corn husks, soaked until pliable

Directions

  1. 1Blend the corn kernels with milk until thick but still slightly textured.
  2. 2Stir in melted butter, sugar, and salt.
  3. 3Overlap two softened corn husks and spoon the corn mixture into the centre.
  4. 4Fold the husks tightly around the filling and tie the ends if needed.
  5. 5Steam the tamales over simmering water for 40–45 minutes until the filling is set.
  6. 6Rest the tamales for 10 minutes before unwrapping and serving warm.

💡 Do not blend the corn completely smooth; a little texture gives the tamales their characteristic fresh-corn bite.
