Tender corn masa filled with savory pork and wrapped in corn husks, steamed to perfection for a traditional Mexican breakfast.

Ingredients

  • 2 cups corn masa harina
  • 1 cup lard or butter, softened
  • 1.5 cups chicken or vegetable broth
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups shredded cooked pork
  • 1 cup red chile sauce
  • 1 cup corn husks, soaked
  • 1 cup shredded cheese

Directions

  1. 1Beat lard and masa harina together until fluffy, then add baking powder, salt, and broth to form a spreadable dough.
  2. 2Mix shredded pork with chile sauce and set aside.
  3. 3Spread about 2 tablespoons of masa onto the center of each soaked corn husk.
  4. 4Place a spoonful of pork filling and a pinch of cheese in the center of the masa.
  5. 5Fold the sides of the husk toward the center, then fold up the bottom and leave the top open.
  6. 6Stand tamales upright in a steamer pot with water below, cover with extra husks, and steam for 45-50 minutes until masa pulls away from husks easily.
