Tamarind Rice

Ingredients

  • 3 cups cooked rice (cooled)
  • 3 tablespoons tamarind paste
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal (split black lentils)
  • 10-12 curry leaves
  • 2 dried red chilies
  • 1/4 cup roasted peanuts
  • 1/4 cup roasted cashews
  • 1 teaspoon salt
  • 1/2 teaspoon turmeric powder

Directions

  1. 1Mix tamarind paste with 2 tablespoons of water until smooth.
  2. 2Heat oil in a large pan or wok over medium heat.
  3. 3Add mustard seeds and let them crackle, then add urad dal, dried chilies, and curry leaves, stirring until dal turns golden.
  4. 4Pour in the tamarind mixture and turmeric powder, cook for 1-2 minutes until fragrant.
  5. 5Add the cooked rice and salt, mix well until all rice grains are coated evenly.
  6. 6Stir in peanuts and cashews, cooking for another 2-3 minutes on medium heat.
  7. 7Taste and adjust salt or tamarind as needed, then serve hot.
