Tamarind Rice

Ingredients
- •3 cups cooked rice (cooled)
- •3 tablespoons tamarind paste
- •2 tablespoons oil
- •1 teaspoon mustard seeds
- •1 teaspoon urad dal (split black lentils)
- •10-12 curry leaves
- •2 dried red chilies
- •1/4 cup roasted peanuts
- •1/4 cup roasted cashews
- •1 teaspoon salt
- •1/2 teaspoon turmeric powder
Directions
- 1Mix tamarind paste with 2 tablespoons of water until smooth.
- 2Heat oil in a large pan or wok over medium heat.
- 3Add mustard seeds and let them crackle, then add urad dal, dried chilies, and curry leaves, stirring until dal turns golden.
- 4Pour in the tamarind mixture and turmeric powder, cook for 1-2 minutes until fragrant.
- 5Add the cooked rice and salt, mix well until all rice grains are coated evenly.
- 6Stir in peanuts and cashews, cooking for another 2-3 minutes on medium heat.
- 7Taste and adjust salt or tamarind as needed, then serve hot.
