Ingredients

  • •2 lbs chicken thighs and drumsticks
  • •1 cup plain yogurt
  • •3 tablespoons tandoori spice powder
  • •2 tablespoons paprika
  • •3 cloves garlic, minced
  • •1 tablespoon fresh ginger, grated
  • •2 tablespoons lemon juice
  • •1 teaspoon salt
  • •2 tablespoons vegetable oil

Directions

  1. 1Mix yogurt, tandoori spice powder, paprika, garlic, ginger, lemon juice, and salt in a bowl to create the marinade.
  2. 2Make shallow cuts on chicken pieces and coat thoroughly with the marinade. Refrigerate for at least 30 minutes, preferably 2-4 hours.
  3. 3Preheat oven to 425°F and line a baking sheet with foil. Brush with oil.
  4. 4Place marinated chicken on the prepared baking sheet and drizzle with remaining oil.
  5. 5Roast for 25-30 minutes until chicken is cooked through and edges are charred, turning halfway through.
  6. 6Let rest for 5 minutes before serving with lemon wedges and cilantro.

💡 Slash thick chicken pieces once or twice before marinating so the yogurt and tandoori spices season beyond the surface.
