Tao Hoo Tod (Thai Fried Tofu with Peanut Sauce)

Tofu dusted in rice flour and fried until the shell crackles, with a sweet chili and peanut sauce to dip.

Ingredients

  • 450 g extra firm tofu
  • 60 g rice flour
  • 500 ml neutral oil, for frying
  • 80 g peanuts
  • 60 ml sweet chili sauce
  • 1 tbsp rice vinegar
  • 1 tbsp cilantro, chopped

Directions

  1. 1Press the tofu between paper towels for ten minutes, then cut it into thick cubes.
  2. 2Toss the cubes in the rice flour until every face is dry and dusty.
  3. 3Heat the oil to 180C.
  4. 4Fry the cubes five minutes, turning, until the shell is pale gold and crackles when tapped.
  5. 5Crush the peanuts roughly and stir them into the sweet chili sauce with the rice vinegar.
  6. 6Drain the tofu, scatter with cilantro, and serve the sauce alongside.

💡 Rice flour, not wheat flour. Wheat gives a soft coating where rice flour gives the thin brittle shell this dish is about.
