Ingredients

  • •1/3 cup small tapioca pearls
  • •2 cups whole milk
  • •1/3 cup granulated sugar
  • •3 egg yolks
  • •2 tablespoons butter
  • •1 teaspoon vanilla extract
  • •1/4 teaspoon salt
  • •2 tablespoons water

Directions

  1. 1Soak tapioca pearls in 2 tablespoons of water for 5 minutes until softened.
  2. 2Heat milk in a saucepan over medium heat until small bubbles form around the edges.
  3. 3Whisk together egg yolks, sugar, and salt in a bowl until pale and thick.
  4. 4Slowly add hot milk to egg mixture while whisking constantly to temper the eggs, then return to saucepan.
  5. 5Add soaked tapioca to the milk mixture and cook over medium-low heat for 5-7 minutes, stirring frequently, until thickened.
  6. 6Remove from heat and stir in butter and vanilla extract.
  7. 7Pour into serving dishes and chill for at least 2 hours before serving.

💡 Tapioca pearls should be translucent with only a tiny opaque centre; overcooking until completely clear can make pudding gummy after chilling.
