Japanese fried chicken marinated in soy and ginger, crispy on the outside and juicy within.

Ingredients

  • 2 lbs chicken thighs, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 cup all-purpose flour
  • 1/4 cup potato starch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups vegetable oil for frying
  • 1 tablespoon green onions, sliced

Directions

  1. 1Combine soy sauce, mirin, ginger, garlic, and sesame oil in a bowl.
  2. 2Add chicken pieces to the marinade and refrigerate for at least 15 minutes.
  3. 3Mix flour, potato starch, salt, and black pepper in another bowl.
  4. 4Heat oil in a deep skillet or wok to 350°F (175°C).
  5. 5Remove chicken from marinade and coat thoroughly with the flour mixture.
  6. 6Fry chicken in batches for 6-8 minutes until golden brown and cooked through.
  7. 7Drain fried chicken on paper towels.
  8. 8Serve hot, garnished with green onions.
