Tatsutaage
Japanese fried chicken marinated in soy and ginger, crispy on the outside and juicy within.

Ingredients
- •2 lbs chicken thighs, cut into bite-sized pieces
- •1/4 cup soy sauce
- •2 tablespoons mirin
- •1 tablespoon fresh ginger, minced
- •3 cloves garlic, minced
- •1 teaspoon sesame oil
- •1 cup all-purpose flour
- •1/4 cup potato starch
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •2 cups vegetable oil for frying
- •1 tablespoon green onions, sliced
Directions
- 1Combine soy sauce, mirin, ginger, garlic, and sesame oil in a bowl.
- 2Add chicken pieces to the marinade and refrigerate for at least 15 minutes.
- 3Mix flour, potato starch, salt, and black pepper in another bowl.
- 4Heat oil in a deep skillet or wok to 350°F (175°C).
- 5Remove chicken from marinade and coat thoroughly with the flour mixture.
- 6Fry chicken in batches for 6-8 minutes until golden brown and cooked through.
- 7Drain fried chicken on paper towels.
- 8Serve hot, garnished with green onions.
