Ingredients

  • 2 1/2 cups all-purpose flour
  • 4 tbsp unsalted butter, softened
  • 1 egg
  • 1/2 tsp salt
  • 1/2 cup warm water
  • 12 oz queso blanco cheese, cut into sticks
  • 4 cups vegetable oil for frying

Directions

  1. 1Mix flour and salt, then work in butter, egg, and warm water until a smooth dough forms.
  2. 2Knead for 5 minutes, cover, and rest the dough for 20 minutes.
  3. 3Roll the dough thin and cut it into long strips about 3/4 inch wide.
  4. 4Wrap each queso blanco stick diagonally with dough, overlapping the edges and sealing both ends.
  5. 5Fry the tequeños at 350°F (175°C) for 2–3 minutes until evenly golden.
  6. 6Drain briefly and serve hot while the cheese is soft.
