Ingredients
- •2 cups shredded green papaya
- •1 cup cherry tomatoes, halved
- •1 cup long beans, cut into 2-inch pieces
- •3 cloves garlic, minced
- •2-3 Thai chili peppers, chopped
- •3 tablespoons fish sauce
- •2 tablespoons fresh lime juice
- •1 tablespoon palm sugar
- •1/4 cup roasted peanuts, crushed
- •2 tablespoons dried shrimp, optional
Directions
- 1In a large mortar and pestle, gently bruise the garlic and chili peppers together.
- 2Add the long beans and tomatoes, lightly crushing them to release flavors.
- 3Add the shredded green papaya and mix gently with a pestle.
- 4In a small bowl, whisk together fish sauce, lime juice, and palm sugar until sugar dissolves.
- 5Pour the dressing over the salad and toss well to combine.
- 6Transfer to a serving bowl and top with crushed peanuts and dried shrimp.
- 7Serve immediately while vegetables are crisp and fresh.
