Ingredients

  • 2 cups shredded green papaya
  • 1 cup cherry tomatoes, halved
  • 1 cup long beans, cut into 2-inch pieces
  • 3 cloves garlic, minced
  • 2-3 Thai chili peppers, chopped
  • 3 tablespoons fish sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon palm sugar
  • 1/4 cup roasted peanuts, crushed
  • 2 tablespoons dried shrimp, optional

Directions

  1. 1In a large mortar and pestle, gently bruise the garlic and chili peppers together.
  2. 2Add the long beans and tomatoes, lightly crushing them to release flavors.
  3. 3Add the shredded green papaya and mix gently with a pestle.
  4. 4In a small bowl, whisk together fish sauce, lime juice, and palm sugar until sugar dissolves.
  5. 5Pour the dressing over the salad and toss well to combine.
  6. 6Transfer to a serving bowl and top with crushed peanuts and dried shrimp.
  7. 7Serve immediately while vegetables are crisp and fresh.
