Thai Peanut Chicken Wrap

Ingredients
- •1.5 lbs boneless, skinless chicken breasts
- •1/2 cup creamy peanut butter
- •3 tablespoons soy sauce
- •2 tablespoons lime juice
- •1 tablespoon honey
- •1 teaspoon minced garlic
- •1/4 teaspoon red pepper flakes
- •4 large flour tortillas
- •2 cups shredded lettuce
- •1 cucumber, thinly sliced
- •1 large carrot, julienned
Directions
- 1Season chicken breasts with salt and pepper, then grill or pan-sear over medium-high heat for 6-7 minutes per side until cooked through. Let cool slightly, then slice into strips.
- 2In a bowl, whisk together peanut butter, soy sauce, lime juice, honey, garlic, and red pepper flakes until smooth. Add water a tablespoon at a time if sauce is too thick.
- 3Warm tortillas in a skillet or microwave for 30 seconds until pliable.
- 4Lay each tortilla flat and spread 2-3 tablespoons of peanut sauce down the center.
- 5Layer lettuce, cucumber, carrots, and sliced chicken on top of the sauce.
- 6Fold in the sides of the tortilla and roll tightly into a wrap. Serve immediately with extra peanut sauce on the side.
