Thai Peanut Chicken Wrap

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1/2 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon minced garlic
  • 1/4 teaspoon red pepper flakes
  • 4 large flour tortillas
  • 2 cups shredded lettuce
  • 1 cucumber, thinly sliced
  • 1 large carrot, julienned

Directions

  1. 1Season chicken breasts with salt and pepper, then grill or pan-sear over medium-high heat for 6-7 minutes per side until cooked through. Let cool slightly, then slice into strips.
  2. 2In a bowl, whisk together peanut butter, soy sauce, lime juice, honey, garlic, and red pepper flakes until smooth. Add water a tablespoon at a time if sauce is too thick.
  3. 3Warm tortillas in a skillet or microwave for 30 seconds until pliable.
  4. 4Lay each tortilla flat and spread 2-3 tablespoons of peanut sauce down the center.
  5. 5Layer lettuce, cucumber, carrots, and sliced chicken on top of the sauce.
  6. 6Fold in the sides of the tortilla and roll tightly into a wrap. Serve immediately with extra peanut sauce on the side.
