Thit Kho Tau
Tender pork braised in a rich caramel sauce with coconut water and hard-boiled eggs until fall-apart delicious.

Ingredients
- •1.5 lbs pork shoulder or belly, cut into 2-inch cubes
- •6 hard-boiled eggs, peeled
- •1/3 cup sugar
- •3 tbsp fish sauce
- •3 cloves garlic, minced
- •2 tbsp vegetable oil
- •1.5 cups coconut water
- •1 tbsp soy sauce
- •1 tsp black pepper
- •2 shallots, sliced
Directions
- 1Heat oil in a large pot over medium-high heat. Add minced garlic and sliced shallots, stirring until fragrant.
- 2Add pork cubes and brown on all sides for 5-7 minutes.
- 3Sprinkle sugar over the meat and stir constantly for 2-3 minutes until the sugar caramelizes and coats the pork.
- 4Add fish sauce, soy sauce, and black pepper, stirring well.
- 5Pour in coconut water until meat is mostly covered. Bring to a boil, then reduce heat to low.
- 6Cover and simmer for 45 minutes until pork is tender.
- 7Add hard-boiled eggs and simmer uncovered for 10-15 minutes until sauce reduces and thickens.
- 8Taste and adjust seasonings if needed. Serve hot with steamed rice.
