Thit Kho Tau

Tender pork braised in a rich caramel sauce with coconut water and hard-boiled eggs until fall-apart delicious.

Ingredients

  • 1.5 lbs pork shoulder or belly, cut into 2-inch cubes
  • 6 hard-boiled eggs, peeled
  • 1/3 cup sugar
  • 3 tbsp fish sauce
  • 3 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1.5 cups coconut water
  • 1 tbsp soy sauce
  • 1 tsp black pepper
  • 2 shallots, sliced

Directions

  1. 1Heat oil in a large pot over medium-high heat. Add minced garlic and sliced shallots, stirring until fragrant.
  2. 2Add pork cubes and brown on all sides for 5-7 minutes.
  3. 3Sprinkle sugar over the meat and stir constantly for 2-3 minutes until the sugar caramelizes and coats the pork.
  4. 4Add fish sauce, soy sauce, and black pepper, stirring well.
  5. 5Pour in coconut water until meat is mostly covered. Bring to a boil, then reduce heat to low.
  6. 6Cover and simmer for 45 minutes until pork is tender.
  7. 7Add hard-boiled eggs and simmer uncovered for 10-15 minutes until sauce reduces and thickens.
  8. 8Taste and adjust seasonings if needed. Serve hot with steamed rice.
