Three-Bean Chili

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 cup beef broth
  • Salt and pepper to taste seasoning

Directions

  1. 1Heat olive oil in a large pot over medium-high heat. Add diced onion and cook until softened, about 3 minutes. Add minced garlic and cook for 1 minute more.
  2. 2Add ground beef to the pot and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain excess fat if needed.
  3. 3Stir in chili powder and cumin, cooking for 1 minute until fragrant.
  4. 4Add crushed tomatoes, all three beans, and beef broth to the pot. Stir well to combine.
  5. 5Bring the chili to a simmer, then reduce heat to low. Simmer uncovered for 25-30 minutes, stirring occasionally.
  6. 6Taste and adjust seasoning with salt and pepper as needed. Serve hot, optionally topped with sour cream, cheese, or fresh cilantro.
