Thumbprint Cookies
Buttery shortbread cookies with sweet jam centers made with your thumb impression.

Ingredients
- •1 cup butter, softened
- •3/4 cup granulated sugar
- •1 large egg yolk
- •1 teaspoon vanilla extract
- •2 cups all-purpose flour
- •1/4 teaspoon salt
- •1/2 cup jam or jelly, any flavor
Directions
- 1Preheat oven to 350°F. In a large bowl, cream together butter and sugar until light and fluffy, about 2-3 minutes.
- 2Beat in egg yolk and vanilla extract until well combined.
- 3In a separate bowl, whisk together flour and salt. Gradually mix into the butter mixture until a dough forms.
- 4Roll dough into 1-inch balls and place on baking sheets about 2 inches apart.
- 5Press your thumb gently into the center of each ball to create an indentation, being careful not to press through the bottom.
- 6Fill each thumbprint with about 1/2 teaspoon of jam.
- 7Bake for 12-15 minutes until the edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
