Tiger Skin Peppers (Chinese Pan-Seared Peppers)
Chinese green peppers blistered in a hot pan and glazed with black vinegar, soy, garlic, and sugar.

Ingredients
- •1 1/2 lb long green peppers
- •2 tbsp vegetable oil
- •3 cloves garlic, minced
- •2 tbsp Chinese black vinegar
- •1 tbsp soy sauce
- •1 tsp granulated sugar
Directions
- 1Dry the peppers thoroughly and press them lightly to flatten.
- 2Heat a skillet until very hot and add vegetable oil.
- 3Cook the peppers for 5–6 minutes, turning, until blistered and softened.
- 4Add garlic and cook for 30 seconds.
- 5Add black vinegar, soy sauce, and sugar and toss for 1 minute.
- 6Serve hot or at room temperature.
