Tiger Skin Peppers (Chinese Pan-Seared Peppers)

Chinese green peppers blistered in a hot pan and glazed with black vinegar, soy, garlic, and sugar.

Ingredients

  • 1 1/2 lb long green peppers
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 2 tbsp Chinese black vinegar
  • 1 tbsp soy sauce
  • 1 tsp granulated sugar

Directions

  1. 1Dry the peppers thoroughly and press them lightly to flatten.
  2. 2Heat a skillet until very hot and add vegetable oil.
  3. 3Cook the peppers for 5–6 minutes, turning, until blistered and softened.
  4. 4Add garlic and cook for 30 seconds.
  5. 5Add black vinegar, soy sauce, and sugar and toss for 1 minute.
  6. 6Serve hot or at room temperature.

💡 Start with very dry peppers and a hot pan for proper blistering.
