Tinga de Pollo

Smoky shredded chicken in a rich chipotle and tomato sauce, perfect served over rice or in tortillas.

Ingredients

  • 2 lbs chicken breasts
  • 2 tbsp vegetable oil
  • 1 medium white onion, sliced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 chipotle peppers in adobo sauce, chopped
  • 2 tbsp adobo sauce
  • 1/2 cup chicken broth
  • 1/2 tsp cumin
  • 1/4 cup sliced jalapeños
  • to taste Salt and pepper

Directions

  1. 1Boil chicken breasts in salted water for 20 minutes until fully cooked, then shred with two forks and set aside.
  2. 2Heat oil in a large skillet over medium heat and sauté onion until softened, about 5 minutes.
  3. 3Add garlic and cook for 1 minute until fragrant.
  4. 4Stir in diced tomatoes, chipotle peppers, adobo sauce, chicken broth, and cumin.
  5. 5Add shredded chicken and simmer for 10 minutes until sauce thickens slightly.
  6. 6Fold in jalapeños and season with salt and pepper to taste.
  7. 7Serve hot over rice, in tortillas, or with your favorite accompaniments.
