Tinga de Pollo
Smoky shredded chicken in a rich chipotle and tomato sauce, perfect served over rice or in tortillas.

Ingredients
- •2 lbs chicken breasts
- •2 tbsp vegetable oil
- •1 medium white onion, sliced
- •2 cloves garlic, minced
- •1 can (14 oz) diced tomatoes
- •2 chipotle peppers in adobo sauce, chopped
- •2 tbsp adobo sauce
- •1/2 cup chicken broth
- •1/2 tsp cumin
- •1/4 cup sliced jalapeños
- •to taste Salt and pepper
Directions
- 1Boil chicken breasts in salted water for 20 minutes until fully cooked, then shred with two forks and set aside.
- 2Heat oil in a large skillet over medium heat and sauté onion until softened, about 5 minutes.
- 3Add garlic and cook for 1 minute until fragrant.
- 4Stir in diced tomatoes, chipotle peppers, adobo sauce, chicken broth, and cumin.
- 5Add shredded chicken and simmer for 10 minutes until sauce thickens slightly.
- 6Fold in jalapeños and season with salt and pepper to taste.
- 7Serve hot over rice, in tortillas, or with your favorite accompaniments.
