Ingredients
- •1 lb fresh white fish fillet (halibut or sea bass), thinly sliced
- •4 limes, juiced
- •2 aji amarillo peppers, seeded
- •1/2 cup mayonnaise
- •1/4 cup evaporated milk
- •2 cloves garlic, minced
- •1 red onion, thinly sliced
- •1/4 cup cilantro, chopped
- •2 serrano peppers, thinly sliced

Directions
- 1Arrange thinly sliced fish on a chilled plate in slightly overlapping portions.
- 2Pour lime juice over the fish and season with salt and white pepper; let sit 2-3 minutes.
- 3Blend aji amarillo peppers, garlic, mayonnaise, and evaporated milk until smooth; season to taste.
- 4Drizzle the aji amarillo sauce decoratively over the fish.
- 5Garnish with sliced red onion, serrano peppers, and fresh cilantro.
- 6Serve immediately on chilled plates with lime wedges on the side.
