⏱ 30 minServes 8Italian

Ingredients

  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 1 1/3 cups mascarpone cheese
  • 1 cup heavy cream
  • 2 cups strong brewed coffee, cooled
  • 3 tablespoons coffee liqueur or rum
  • 40 ladyfinger cookies
  • 2 tablespoons unsweetened cocoa powder

Directions

  1. 1Whisk egg yolks and sugar together over a double boiler until pale and warm, about 3 minutes. Remove from heat and let cool slightly.
  2. 2Fold mascarpone cheese into the cooled egg mixture until smooth and combined.
  3. 3In a separate bowl, whip heavy cream to stiff peaks and gently fold into the mascarpone mixture.
  4. 4Combine cooled coffee and liqueur in a shallow dish. Quickly dip each ladyfinger into the coffee mixture for 1-2 seconds and arrange in a single layer in a 9x13 inch dish.
  5. 5Spread half of the mascarpone cream over the ladyfinger layer.
  6. 6Repeat with another layer of dipped ladyfingers and the remaining cream.
  7. 7Cover and refrigerate for at least 4 hours or overnight.
  8. 8Dust generously with cocoa powder just before serving.
