Tiropita (Greek Cheese Pie)
Flaky, golden phyllo layers wrapped around a savoury feta and egg filling — a beloved Greek snack and breakfast pie that is just as satisfying straight from the oven as it is at room temperature.

Ingredients
- •375 g package phyllo dough, thawed
- •400 g feta cheese, crumbled
- •1 cup ricotta cheese
- •3 large eggs
- •3 tbsp fresh dill, finely chopped
- •½ tsp black pepper
- •½ cup butter, melted
- •1 tbsp sesame seeds (optional)
Directions
- 1Preheat oven to 375 °F (190 °C) and butter a 9×13-inch baking dish.
- 2In a bowl, mix together feta, ricotta, eggs, dill, and pepper until well combined.
- 3Lay one sheet of phyllo in the dish, brush lightly with melted butter, and repeat with 7 more sheets to form the base.
- 4Spread the cheese filling evenly over the phyllo base.
- 5Layer the remaining phyllo sheets on top, brushing each with melted butter, ending with a buttered top sheet.
- 6Score the top layers into squares or diamonds with a sharp knife without cutting through to the filling, then sprinkle with sesame seeds if using.
- 7Bake for 35–40 minutes until deep golden and crisp.
- 8Cool for 10 minutes before cutting through completely and serving.
💡 Keep unused phyllo covered with a damp towel at all times to prevent cracking. Look for phyllo in the freezer section near puff pastry — thaw overnight in the fridge.
