Tiropita (Greek Cheese Pie)

Flaky, golden phyllo layers wrapped around a savoury feta and egg filling — a beloved Greek snack and breakfast pie that is just as satisfying straight from the oven as it is at room temperature.

Ingredients

  • 375 g package phyllo dough, thawed
  • 400 g feta cheese, crumbled
  • 1 cup ricotta cheese
  • 3 large eggs
  • 3 tbsp fresh dill, finely chopped
  • ½ tsp black pepper
  • ½ cup butter, melted
  • 1 tbsp sesame seeds (optional)

Directions

  1. 1Preheat oven to 375 °F (190 °C) and butter a 9×13-inch baking dish.
  2. 2In a bowl, mix together feta, ricotta, eggs, dill, and pepper until well combined.
  3. 3Lay one sheet of phyllo in the dish, brush lightly with melted butter, and repeat with 7 more sheets to form the base.
  4. 4Spread the cheese filling evenly over the phyllo base.
  5. 5Layer the remaining phyllo sheets on top, brushing each with melted butter, ending with a buttered top sheet.
  6. 6Score the top layers into squares or diamonds with a sharp knife without cutting through to the filling, then sprinkle with sesame seeds if using.
  7. 7Bake for 35–40 minutes until deep golden and crisp.
  8. 8Cool for 10 minutes before cutting through completely and serving.

💡 Keep unused phyllo covered with a damp towel at all times to prevent cracking. Look for phyllo in the freezer section near puff pastry — thaw overnight in the fridge.
