Tod Mun Pla (Thai Fish Cakes)
Springy Thai fish cakes pounded with red curry paste, flecked with green beans and lime leaf, fried until burnished.

Ingredients
- •450 g white fish fillets
- •2 tbsp red curry paste
- •1 large egg
- •100 g green beans, thinly sliced
- •3 kaffir lime leaves, very finely sliced
- •1 tbsp fish sauce
- •1 tsp sugar
- •2 tbsp neutral oil, for frying
Directions
- 1Pat the fish dry and chop roughly, then pulse to a coarse paste in a food processor.
- 2Add curry paste, egg, fish sauce and sugar. Pulse until the mixture turns sticky and pulls together.
- 3Fold in the green beans and lime leaves by hand.
- 4Wet your palms and shape the mixture into twelve flat patties about a centimetre thick.
- 5Heat the oil over medium and fry the cakes four minutes a side until deep golden.
- 6Drain briefly on paper and serve warm.
💡 The bounce comes from working the paste until it feels tacky. If it still looks wet and loose, keep pulsing.
