Tod Mun Pla (Thai Fish Cakes)

Springy Thai fish cakes pounded with red curry paste, flecked with green beans and lime leaf, fried until burnished.

Ingredients

  • 450 g white fish fillets
  • 2 tbsp red curry paste
  • 1 large egg
  • 100 g green beans, thinly sliced
  • 3 kaffir lime leaves, very finely sliced
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 2 tbsp neutral oil, for frying

Directions

  1. 1Pat the fish dry and chop roughly, then pulse to a coarse paste in a food processor.
  2. 2Add curry paste, egg, fish sauce and sugar. Pulse until the mixture turns sticky and pulls together.
  3. 3Fold in the green beans and lime leaves by hand.
  4. 4Wet your palms and shape the mixture into twelve flat patties about a centimetre thick.
  5. 5Heat the oil over medium and fry the cakes four minutes a side until deep golden.
  6. 6Drain briefly on paper and serve warm.

💡 The bounce comes from working the paste until it feels tacky. If it still looks wet and loose, keep pulsing.
