Ingredients

  • •1 block firm tofu
  • •2 medium zucchini
  • •8 flour tortillas
  • •1.5 cups shredded cheddar cheese
  • •1 tsp smoked paprika
  • •3 cloves garlic
  • •1/2 cup salsa

Directions

  1. 1Press tofu dry and crumble into small pieces.
  2. 2Dice zucchini and sauté with garlic in oil for 4 minutes.
  3. 3Add crumbled tofu and smoked paprika; cook 3 more minutes.
  4. 4Lay tortillas flat and sprinkle cheddar over half of each.
  5. 5Spoon tofu and zucchini mixture over the cheese.
  6. 6Fold tortillas and cook in a dry skillet 2 minutes per side until golden.
  7. 7Slice into wedges and serve with salsa.

💡 Press tofu before sautéing for quesadillas and cook zucchini until its excess water evaporates; a wet filling prevents the tortillas from crisping.
