Tofu Fried Rice
Crispy tofu and fluffy rice tossed with vegetables and savory soy sauce for a quick, satisfying weeknight meal.

Ingredients
- •3 cups cooked rice, chilled
- •14 oz firm tofu, pressed and cubed
- •3 tablespoons vegetable oil
- •2 eggs, beaten
- •1 cup frozen mixed vegetables (peas, carrots, corn)
- •3 cloves garlic, minced
- •3 tablespoons soy sauce
- •1 teaspoon sesame oil
- •2 green onions, chopped
- •1 teaspoon ginger, minced
Directions
- 1Heat 1 tablespoon of oil in a large wok or skillet over high heat and stir-fry the tofu cubes until golden and crispy, about 5 minutes; set aside.
- 2Add remaining oil, scramble the beaten eggs until cooked through, then remove and set aside.
- 3Add garlic and ginger to the pan, cook for 30 seconds until fragrant.
- 4Add frozen vegetables and stir-fry for 2-3 minutes until heated through.
- 5Add the chilled rice, breaking up any clumps, and stir-fry for 3-4 minutes.
- 6Return tofu and eggs to the pan, add soy sauce and sesame oil, and toss everything together for 1-2 minutes.
- 7Garnish with green onions and serve immediately.
