Tofu Shakshuka

Ingredients
- •3 tablespoons olive oil
- •1 medium onion, diced
- •4 cloves garlic, minced
- •1 teaspoon ground cumin
- •1 teaspoon paprika
- •1 can (28 oz) crushed tomatoes
- •1 block (14 oz) firm tofu, cubed
- •1/4 teaspoon cayenne pepper
- •to taste salt and pepper
- •1/4 cup fresh cilantro, chopped
- •2 tablespoons fresh parsley, chopped
Directions
- 1Heat olive oil in a large skillet over medium heat and sauté diced onion until softened, about 5 minutes.
- 2Add minced garlic, cumin, and paprika, stirring constantly for 1 minute until fragrant.
- 3Pour in crushed tomatoes and bring to a simmer, seasoning with salt, pepper, and cayenne pepper.
- 4Gently add cubed tofu to the tomato sauce and stir carefully to distribute evenly.
- 5Simmer for 10-12 minutes, allowing the tofu to absorb the sauce flavors while the sauce reduces slightly.
- 6Taste and adjust seasonings as needed, then garnish with fresh cilantro and parsley before serving.
- 7Serve warm with crusty bread for dipping or over rice.
