Tofu Shakshuka

Silky cubed tofu poached in a spiced tomato sauce with warming spices and fresh herbs for a protein-packed vegetarian dinner.

Ingredients

  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 oz) crushed tomatoes
  • 1 block (14 oz) firm tofu, cubed
  • 1/4 teaspoon cayenne pepper
  • to taste salt and pepper
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh parsley, chopped

Directions

  1. 1Heat olive oil in a large skillet over medium heat and sauté diced onion until softened, about 5 minutes.
  2. 2Add minced garlic, cumin, and paprika, stirring constantly for 1 minute until fragrant.
  3. 3Pour in crushed tomatoes and bring to a simmer, seasoning with salt, pepper, and cayenne pepper.
  4. 4Gently add cubed tofu to the tomato sauce and stir carefully to distribute evenly.
  5. 5Simmer for 10-12 minutes, allowing the tofu to absorb the sauce flavors while the sauce reduces slightly.
  6. 6Taste and adjust seasonings as needed, then garnish with fresh cilantro and parsley before serving.
  7. 7Serve warm with crusty bread for dipping or over rice.
