Tokwa't Baboy (Filipino Tofu and Pork)
Filipino fried tofu and tender pork tossed with onion, chile, and a sharp soy-vinegar dressing.

Ingredients
- •1 lb pork belly, cut into chunks
- •14 oz firm tofu, cubed
- •1/3 cup vegetable oil
- •1/2 medium red onion, thinly sliced
- •1 fresh chili, sliced
- •1/3 cup soy sauce
- •1/3 cup white vinegar
- •2 cloves garlic, minced
- •1 tsp granulated sugar
Directions
- 1Simmer the pork belly in water for 25 minutes until tender, then drain and slice.
- 2Pat the tofu dry and fry it in vegetable oil until crisp on all sides.
- 3Mix soy sauce, vinegar, garlic, sugar, red onion, and chili.
- 4Combine warm pork and crisp tofu in a serving bowl.
- 5Pour the soy-vinegar dressing over the pork and tofu.
- 6Let stand for 5 minutes before serving.
