Tom Yum Gai

Ingredients
- •1 liter chicken broth
- •500g chicken breast, cubed
- •3 stalks lemongrass, bruised and cut into 2-inch pieces
- •4 slices fresh galangal root
- •3 red chili peppers, crushed
- •4 lime leaves, torn
- •200g mushrooms, sliced
- •3 tablespoons fish sauce
- •3 tablespoons fresh lime juice
- •1 tablespoon sugar
- •2 tablespoons cilantro, chopped
Directions
- 1Bring chicken broth to a boil in a large pot over medium-high heat.
- 2Add lemongrass, galangal, chili peppers, and lime leaves, then simmer for 5 minutes to infuse flavors.
- 3Add cubed chicken and mushrooms, simmer for 10 minutes until chicken is cooked through.
- 4Stir in fish sauce, lime juice, and sugar, tasting and adjusting seasonings as needed.
- 5Remove from heat and strain out large aromatics if desired, or leave them in for texture.
- 6Divide into bowls and garnish with fresh cilantro before serving immediately.
