Tom Yum Gai

Ingredients

  • 1 liter chicken broth
  • 500g chicken breast, cubed
  • 3 stalks lemongrass, bruised and cut into 2-inch pieces
  • 4 slices fresh galangal root
  • 3 red chili peppers, crushed
  • 4 lime leaves, torn
  • 200g mushrooms, sliced
  • 3 tablespoons fish sauce
  • 3 tablespoons fresh lime juice
  • 1 tablespoon sugar
  • 2 tablespoons cilantro, chopped

Directions

  1. 1Bring chicken broth to a boil in a large pot over medium-high heat.
  2. 2Add lemongrass, galangal, chili peppers, and lime leaves, then simmer for 5 minutes to infuse flavors.
  3. 3Add cubed chicken and mushrooms, simmer for 10 minutes until chicken is cooked through.
  4. 4Stir in fish sauce, lime juice, and sugar, tasting and adjusting seasonings as needed.
  5. 5Remove from heat and strain out large aromatics if desired, or leave them in for texture.
  6. 6Divide into bowls and garnish with fresh cilantro before serving immediately.
