Tom Yum Soup
A vibrant Thai hot and sour soup bursting with aromatic lemongrass, lime, and spicy chilies.

Ingredients
- •4 cups chicken or vegetable broth
- •2 stalks lemongrass, cut into 2-inch pieces
- •4 slices fresh ginger
- •3 red Thai chilies, crushed
- •3 cloves garlic, minced
- •8 oz shrimp or chicken, diced
- •1 cup mushrooms, sliced
- •3 tablespoons fish sauce
- •2 limes, juiced
- •1 tablespoon sugar
- •2 tablespoons fresh cilantro, chopped
Directions
- 1Bring broth to a boil in a large pot over medium-high heat.
- 2Add lemongrass, ginger, chilies, and garlic; simmer for 5 minutes to infuse flavors.
- 3Add shrimp or chicken and mushrooms, cooking until protein is done, about 5-7 minutes.
- 4Stir in fish sauce and sugar, adjusting to taste.
- 5Remove from heat and add lime juice.
- 6Strain out lemongrass and ginger pieces if desired, or leave for authenticity.
- 7Ladle into bowls and garnish with fresh cilantro before serving.
