Tomato and Mozzarella Panini

A warm, crispy Italian sandwich with melted fresh mozzarella, ripe tomatoes, and fragrant basil.

Ingredients

  • 4 slices ciabatta or focaccia bread
  • 8 ounces fresh mozzarella
  • 2 medium ripe tomatoes
  • 8-10 leaves fresh basil
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • to taste salt
  • to taste black pepper

Directions

  1. 1Slice tomatoes into thin rounds and pat dry with paper towels. Season with salt, pepper, and balsamic vinegar.
  2. 2Slice the mozzarella into thin rounds.
  3. 3Heat a panini press or skillet over medium-high heat and lightly oil it.
  4. 4Layer each bread slice with mozzarella, tomato slices, and fresh basil, then top with another slice of bread.
  5. 5Brush the outside of each sandwich lightly with olive oil.
  6. 6Cook the panini in the press or skillet for 3-4 minutes per side until golden brown and cheese is melted.
  7. 7Remove from heat, let cool for 1 minute, cut diagonally, and serve immediately.
