Tomato and Mozzarella Panini
A warm, crispy Italian sandwich with melted fresh mozzarella, ripe tomatoes, and fragrant basil.

Ingredients
- •4 slices ciabatta or focaccia bread
- •8 ounces fresh mozzarella
- •2 medium ripe tomatoes
- •8-10 leaves fresh basil
- •2 tablespoons olive oil
- •1 teaspoon balsamic vinegar
- •to taste salt
- •to taste black pepper
Directions
- 1Slice tomatoes into thin rounds and pat dry with paper towels. Season with salt, pepper, and balsamic vinegar.
- 2Slice the mozzarella into thin rounds.
- 3Heat a panini press or skillet over medium-high heat and lightly oil it.
- 4Layer each bread slice with mozzarella, tomato slices, and fresh basil, then top with another slice of bread.
- 5Brush the outside of each sandwich lightly with olive oil.
- 6Cook the panini in the press or skillet for 3-4 minutes per side until golden brown and cheese is melted.
- 7Remove from heat, let cool for 1 minute, cut diagonally, and serve immediately.
