Ingredients

  • •2 tablespoons butter
  • •1 medium onion, diced
  • •3 cloves garlic, minced
  • •1 can (28 oz) crushed tomatoes
  • •2 cups vegetable broth
  • •1/2 cup heavy cream
  • •1 teaspoon salt
  • •1/2 teaspoon black pepper
  • •8 slices bread
  • •4 tablespoons butter, softened
  • •8 slices cheddar cheese

Directions

  1. 1Melt 2 tablespoons butter in a pot over medium heat, then sauté diced onion and garlic until fragrant, about 3 minutes.
  2. 2Add crushed tomatoes and vegetable broth, bring to a simmer, and cook for 10 minutes to blend flavors.
  3. 3Stir in heavy cream, salt, and pepper, then simmer for 5 more minutes until soup is creamy and smooth.
  4. 4While soup cooks, butter one side of each bread slice, place cheese between two slices buttered-side-out, then cook on a skillet over medium heat until golden and cheese melts, about 3-4 minutes per side.
  5. 5Ladle soup into bowls and serve with grilled cheese sandwiches on the side.

💡 Grilled cheese should be made separately from tomato soup timing; holding a finished sandwich over low heat softens the crust.
