Toor Dal

A comforting, creamy Indian lentil curry infused with aromatic spices and finished with a fragrant tempering of mustard seeds and curry leaves.

Ingredients

  • 1 cup toor dal (pigeon peas), rinsed
  • 3 cups water
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons ghee or oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 8-10 curry leaves
  • 2 dried red chilies
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon salt

Directions

  1. 1Boil toor dal with 3 cups water and turmeric powder until soft and creamy, about 20 minutes. Mash slightly.
  2. 2Heat ghee in a separate pan and add mustard seeds, cumin seeds, curry leaves, and dried red chilies. Sauté until seeds crackle, about 1 minute.
  3. 3Add chopped onion and garlic to the tempering, cook until golden, about 3 minutes.
  4. 4Pour the tempering into the cooked dal and stir well.
  5. 5Add salt and lemon juice, simmer for 2-3 minutes.
  6. 6Serve hot with steamed rice or Indian bread.
