Toor Dal
A comforting, creamy Indian lentil curry infused with aromatic spices and finished with a fragrant tempering of mustard seeds and curry leaves.

Ingredients
- •1 cup toor dal (pigeon peas), rinsed
- •3 cups water
- •1/2 teaspoon turmeric powder
- •2 tablespoons ghee or oil
- •1 teaspoon mustard seeds
- •1 teaspoon cumin seeds
- •8-10 curry leaves
- •2 dried red chilies
- •1 medium onion, finely chopped
- •2 cloves garlic, minced
- •1 tablespoon lemon juice
- •1 teaspoon salt
Directions
- 1Boil toor dal with 3 cups water and turmeric powder until soft and creamy, about 20 minutes. Mash slightly.
- 2Heat ghee in a separate pan and add mustard seeds, cumin seeds, curry leaves, and dried red chilies. Sauté until seeds crackle, about 1 minute.
- 3Add chopped onion and garlic to the tempering, cook until golden, about 3 minutes.
- 4Pour the tempering into the cooked dal and stir well.
- 5Add salt and lemon juice, simmer for 2-3 minutes.
- 6Serve hot with steamed rice or Indian bread.
