Ingredients
- •2 cups cooked chicken breast, shredded
- •1 cup corn kernels
- •1/2 cup frozen peas, thawed
- •1 medium tomato, seeded and diced
- •1/3 cup green olives, sliced
- •3 green onions, sliced
- •1 1/2 cups milk
- •3 eggs
- •1/2 cup vegetable oil
- •2 cups all-purpose flour
- •1 tbsp baking powder
- •1/2 cup Parmesan cheese, grated
- •1 tsp salt
- •1/2 tsp black pepper
Directions
- 1Heat oven to 375°F (190°C) and grease a 9-by-13-inch baking dish.
- 2Combine chicken, corn, peas, tomato, olives, and green onions in a bowl.
- 3Blend milk, eggs, oil, flour, baking powder, Parmesan, salt, and pepper until smooth.
- 4Pour half the batter into the dish, scatter the chicken filling evenly over it, then cover with remaining batter.
- 5Bake 35–40 minutes until deeply golden and a tester inserted into the batter comes out clean.
- 6Rest 10 minutes before cutting into squares for meal-prep containers.
💡 Keep the tomato seeded and the filling fairly dry; excess liquid creates a gummy layer where the filling meets the batter.
