Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 cup corn kernels
  • 1/2 cup frozen peas, thawed
  • 1 medium tomato, seeded and diced
  • 1/3 cup green olives, sliced
  • 3 green onions, sliced
  • 1 1/2 cups milk
  • 3 eggs
  • 1/2 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions

  1. 1Heat oven to 375°F (190°C) and grease a 9-by-13-inch baking dish.
  2. 2Combine chicken, corn, peas, tomato, olives, and green onions in a bowl.
  3. 3Blend milk, eggs, oil, flour, baking powder, Parmesan, salt, and pepper until smooth.
  4. 4Pour half the batter into the dish, scatter the chicken filling evenly over it, then cover with remaining batter.
  5. 5Bake 35–40 minutes until deeply golden and a tester inserted into the batter comes out clean.
  6. 6Rest 10 minutes before cutting into squares for meal-prep containers.

💡 Keep the tomato seeded and the filling fairly dry; excess liquid creates a gummy layer where the filling meets the batter.
