Tortellini in Brodo

Ingredients
- •2 pounds fresh or frozen cheese tortellini
- •8 cups chicken broth
- •2 tablespoons olive oil
- •1 medium onion, diced
- •2 cloves garlic, minced
- •2 carrots, thinly sliced
- •2 celery stalks, diced
- •1 cup fresh spinach
- •1 teaspoon salt
- •½ teaspoon black pepper
- •¼ cup grated Parmesan cheese
- •1 tablespoon fresh parsley, chopped
Directions
- 1Heat olive oil in a large pot over medium heat and sauté diced onion, garlic, carrots, and celery for 5 minutes until softened.
- 2Pour in the chicken broth and bring to a boil, then reduce heat and simmer for 10 minutes.
- 3Add the tortellini to the simmering broth and cook according to package directions, usually 3-4 minutes for fresh or 4-6 minutes for frozen.
- 4Stir in the fresh spinach and cook for 1-2 minutes until wilted.
- 5Season with salt and pepper to taste.
- 6Ladle into bowls and top with grated Parmesan cheese and fresh parsley before serving.
