Tortilla Thin-Crust Pizza

Ingredients
- •4 large flour tortillas (25 cm / 10-inch)
- •½ cup pizza sauce
- •1½ cups shredded mozzarella
- •40 pepperoni slices
- •2 tsp olive oil
- •¼ tsp garlic powder
- •½ tsp dried Italian seasoning
- •2 tbsp grated Parmesan
Directions
- 1Preheat oven to 220 °C (425 °F) and line two baking sheets with parchment.
- 2Brush each tortilla lightly with olive oil, then place two on each prepared sheet.
- 3Mix garlic powder into the pizza sauce, then spread 2 tbsp of sauce onto each tortilla, leaving a 1 cm border.
- 4Divide mozzarella evenly among the tortillas and top with pepperoni.
- 5Dust each pizza with Italian seasoning and Parmesan.
- 6Bake for 7–9 minutes until edges are golden and cheese is bubbling.
- 7Slide onto a cutting board, rest 1 minute, then cut into wedges and serve immediately.
💡 Swap pepperoni for any topping you like — leftover rotisserie chicken, sliced veggies, or just extra cheese all work perfectly. For extra crispiness, place the tortilla directly on the oven rack for the last 2 minutes.
