Traditional British Plum Cake

A moist, spiced fruit cake bursting with plums and warm autumn flavors, perfect for afternoon tea.

Ingredients

  • 225g softened butter
  • 225g caster sugar
  • 4 eggs
  • 225g self-raising flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 600g fresh plums, halved and pitted
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • Pinch salt

Directions

  1. 1Preheat oven to 180°C and grease a 20cm round cake tin.
  2. 2Cream together butter and sugar until light and fluffy, then beat in eggs one at a time, adding a splash of milk between each.
  3. 3Fold in flour mixed with cinnamon, nutmeg, and salt, then stir in vanilla extract.
  4. 4Pour batter into prepared tin and arrange plum halves skin-side down on top, pressing gently into the batter.
  5. 5Bake for 50-60 minutes until a skewer inserted comes out clean and the top is golden brown.
  6. 6Cool in tin for 10 minutes, then turn out onto a wire rack to cool completely.
