Traditional British Plum Cake
A moist, spiced fruit cake bursting with plums and warm autumn flavors, perfect for afternoon tea.

Ingredients
- •225g softened butter
- •225g caster sugar
- •4 eggs
- •225g self-raising flour
- •1 tsp ground cinnamon
- •1/2 tsp ground nutmeg
- •600g fresh plums, halved and pitted
- •2 tbsp milk
- •1 tsp vanilla extract
- •Pinch salt
Directions
- 1Preheat oven to 180°C and grease a 20cm round cake tin.
- 2Cream together butter and sugar until light and fluffy, then beat in eggs one at a time, adding a splash of milk between each.
- 3Fold in flour mixed with cinnamon, nutmeg, and salt, then stir in vanilla extract.
- 4Pour batter into prepared tin and arrange plum halves skin-side down on top, pressing gently into the batter.
- 5Bake for 50-60 minutes until a skewer inserted comes out clean and the top is golden brown.
- 6Cool in tin for 10 minutes, then turn out onto a wire rack to cool completely.
