Tres Leches Cake

Ingredients

  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 5 large eggs, separated
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 can (14 ounces) sweetened condensed milk
  • 1 can (12 ounces) evaporated milk
  • 0.5 cup heavy cream
  • 2 cups heavy whipping cream
  • 3 tablespoons granulated sugar
  • 1 pound fresh strawberries, sliced

Directions

  1. 1Preheat oven to 350°F. Grease and flour a 9x13 inch baking pan. Whisk together flour, baking powder, and salt in a bowl.
  2. 2Beat egg yolks with 1 cup sugar until pale and fluffy, then add vanilla. Fold in flour mixture. In another bowl, beat egg whites until stiff peaks form, then gently fold into batter.
  3. 3Pour batter into prepared pan and bake for 25-30 minutes until a toothpick comes out clean. Cool completely.
  4. 4Combine sweetened condensed milk, evaporated milk, and heavy cream in a bowl. Pierce the cooled cake all over with a fork and evenly pour the milk mixture over the top. Refrigerate for at least 4 hours or overnight.
  5. 5Beat whipping cream with 3 tablespoons sugar until stiff peaks form. Spread evenly over the chilled cake.
  6. 6Top with sliced strawberries and serve cold.
