Trinidadian Aloo Pie
Trinidadian fried dough pockets filled with seasoned mashed potato, cumin, garlic, and cilantro, portable enough for lunch or a hearty snack.

Ingredients
- •3 cups all-purpose flour
- •2 tsp baking powder
- •1 1/2 tsp salt
- •1 cup, plus more as needed warm water
- •1 1/2 lb russet potatoes, peeled and cubed
- •3 cloves garlic, minced
- •1 1/2 tsp ground cumin
- •1/4 cup fresh cilantro, chopped
- •1/4 Scotch bonnet pepper, finely minced
- •1/4 tsp black pepper
- •3 cups for frying vegetable oil
Directions
- 1Mix flour, baking powder, and half the salt, then add enough warm water to form a soft dough.
- 2Knead the dough 3 minutes, cover, and rest 15 minutes.
- 3Boil potatoes until tender, drain, and mash with garlic, cumin, cilantro, Scotch bonnet, pepper, and remaining salt.
- 4Divide the dough into twelve pieces, flatten each, and enclose a spoonful of potato filling inside.
- 5Press each filled piece into a flat oval, keeping the filling fully sealed.
- 6Fry at 350°F (175°C) for 2–3 minutes per side until puffed and golden, then drain on a rack.
💡 Mash the potatoes while dry and hot; watery filling creates steam pockets that can burst the aloo pies during frying.
